Sweet Potato greens.
We love these more than spinach. You simply pick off the bigger green leaves from your sweet potato plants. Rinse any dirt off with water. boil them for 3 minutes, drain them and return them to the pan with some minsed garlic and salt. Cook just long enough to remove some of the left over liquid and to soften the garlic. Serve hot.
Very Berry Crisp
4 cups Mixed Berries Our favorite is raspberries and strawberries. You could also use blue berries.
2 teaspoons small tapioca
2 Tablespoons maple syrup
1 Tablespoon lemon juice
1 teaspoon cinnamon
Preheat oven to 350 degrees. Line a 9×9 baking dish with parchment paper. Mix ingredients thoroughly and pour in parchment paper lined dish. Bake 25 minutes. While baking prepare topping.
1 ½ tablespoons of almond butter
3 Tablespoons maple syrup
¾ cup rolled oats
½ cup oat flour
Dash of salt
Mix syrup and almond butter until well incorporated. Add rolled oats and coat them thoroughly add flour and a couple shakes of salt and mix with a fork until you have a crumbly topping. When the 25 minutes is up take out of the oven and sprinkle the topping over hot berry mixture. Put back in oven for 15 to 20 minutes. The crunchies should be slightly browned and the berries should be bubbling.
This has been a bit of a challenging but productive week. I was informed Monday my spinning wheel would be delivered. I put a note on the door and stayed close to the house. I worked weeding the strawberry patch and transplanting some of the new shoots they put off in the bare spots where the older plants died off. At 9 PM still no package.
Tuesday morning we called the company and they said it was back out on the truck but if it was not delivered that day it would go to an address on the other side of Ft. Wayne for me to pick up Wed. morning. On Wed. I called and got the same story with a Thursday answer. I kind of lost it in a civil way and asked if I could talk to someone else about the problem. I was not able to talk to anyone else and was not a happy camper. I let Mr. Duane know and he did something on line that could put the package again out on another truck. I called the address where I was to pick it up and they explained they often have problems like this from the company that was supposed to deliver. Duane came home from work Wed. night and said he got a notification that it was at the address I was given Tuesday and we could get it before 6:00 PM. We made it just in time. I wish I could say I was patient, kind and that I did not get up set. I guess God is not done with me yet. LOL
I love my new spinning wheel. I had what I could spin in 3 or 4 days done in one day. I have been lacking in getting things done because of my new toy, but the weeds in the garden are still under control and I got some landscaping work done while waiting for my package to arrive. I also got some work done on gifts I am working on for later.
I pushed Duane to get himself something towards what he would enjoy when he retires for himself for an early birthday present. He got himself a drone and is out playing with it now.
We are both enjoying our new toys. It isn’t often we treat ourselves to toys. We are usually too busy to play.
On Tuesday while I was waiting on my package I did some cooking and lots of drop spindle spinning. I got another spindle full to put into the blanket I am making.
We got some major rain Tuesday. 3 inches. Gully washer was a true statement. It took a big chunk of land out of the farmer’s field behind us. I am always amazed at what water can do in a short amount of time. I sure hope it is not as big a mess to fix as when our bank washed out. The last few years have been hard on the banks in our area. Lots of wash outs. Hopefully they will figure out the problems and get them fixed. It may be worth the hassel
Friday I went yard saling and had lunch with a friend. El Pacifico in Ligonier is my new favorite Mexican restaurant. It was a fun day. Has been a couple years since her and I went yard saling together.
Saturday night we actually went out and watched the fire works all around us. We live between lots of lakes and they all set them off. What we caught of it was an awesome show.
The Lord has been teaching me a new lesson. Wednesday after I got upset over my spinning wheel delivery I felt like the Lord reminded me I had a choice. I could let this ruin my week or I could choose joy and not let the situation take any more from my week. I could choose to look at the bright side. I got the pots in the ground in my front flower bed. I got the weeds and part of the dirt out of the bed by the garage in preparation for stone and I spent a couple restful days doing what I enjoy. Through the rest of the week I became more aware of how I may not be thinking right about certain situations. I am so thankful for my loving savior, my loving husband and how our lives are starting to get easier as we get older. God is good and we are blessed here on the Wade Homestead.
